At The LAB, we’re pouring in Liquid Nitrogen and developing it into something new again.
Our Philosophy:
My first memory of gelato was of Mum buying me a multi-coloured mountain on a cone from a Mr Whippy's van and getting a blue fluorescent tongue and sticky hands afterwards.
My gelato journey has come a long way since then. From watching Heston Blumenthal turn a grilled cheese toastie into ice-cream, sampling from every gelateria I stumbled across in Italy to queueing up in Hong Kong and New York to try their versions of liquid nitrogen ice cream.
Liquid nitrogen presented me with a great opportunity to make gelato without any
preservatives or stabilisers because unlike other gelato that sits in freezers, freshly made and eaten gelato doesn't need them.
Back in Melbourne, I turned my kitchen at home into a test lab, experimenting with different ingredients and flavours to perfect my gelato.
I've found the answer to happiness; fresh milk, a bit of cream and sugar, rich golden egg yolks and a generous amount of dark cocoa powder (and liquid nitrogen, of course) = luscious dark velvety goodness.
