This fall, Chef Chris Jaeckle will demonstrate his interpretation of Italian cuisine with a new restaurant, All'onda, in Greenwich Village just south of Union Square.
This fall, Chef Chris Jaeckle will demonstrate his interpretation of Italian cuisine with a new restaurant, All'onda, in Greenwich Village just south of Union Square (22 East 13th Street between Fifth and University).
A subtle Venetian influence runs through the menu, calling on Jaeckle's experience at Ai Fiori and Morimoto. Expect crudos, handmade pastas, risottos, and chichetti (Venetian bar snacks).
Signature dishes will include vitello e tonno: crispy sweetbreads, celery root, and smoked tuna; a "torellini en brodo" of parmesan dashi, market vegetables, and ricotta dumplings; and a maialino (crispy suckling pig) with rosemary and fennel. Dishes will be sized to allow for sharing a variety of them.
The atmosphere aims to be fun and casual. Jaeckle felt an instant connection with the 80-seat space, in part because of its close proximity to the Union Square Greenmarket, from which many ingredients will be sourced. He also feels the location is welcoming and accessible to all kinds of customers in the neighborhood - students and professionals, visitors and longtime residents.
Industry veteran Chris Cannon will collaborate with Chris Jaeckle and his team on all restaurant matters from the wine list to service to tabletop and overall concept. Cannon brings over 30 years of hands–on experience to All’onda including five NYT 3-star reviews, two James Beard Best New Restaurant Awards, and Wine Spectator Grand Award, among his many accolades.
